Charred Lemon & Garlic Piri Piri Chicken with Crispy Smashed Potatoes

For me, piri-piri chicken should be smoky, spicy, garlicky and SHARP, with really crispy skin and juicy meat underneath. I char the peppers, tomatoes, chillies and lemon until almost blackened before blending them with a plenty of garlic. This is what gives the sauce that deep smoky sweetness rather than it just tasting SPICY. I cooked mine in the pizza oven, but a normal oven works perfectly too. Serve it with crispy smashed potatoes tossed in piri piri seasoning and plenty of that buttery pan sauce, and I promise you this is one you'll make again and again.

Step 1

Spatchcock the chicken: place it breast-side down and cut along either side of the backbone using strong kitchen scissors. Remove the backbone, turn the chicken over, and press firmly down on the breastbone until it lies relatively flat. Pat the chicken completely dry, then season generously with salt and black pepper.
