Iberico Pork Chop with Apple Cider & Caramelised Onion Sauce

Iberico pork is one of those ingredients where I really think the less you mess around with it, the better. It has SO much beautiful fat running through it that the main job here is simply making sure we render that properly, build a ridiculous crust on the outside and, most importantly, don't overcook the meat. The sauce is equally simple. We are taking inspiration from traditional Spanish cooking using cider and onions for this sauce. It’s a banger!

Step 1

Take your pork chop out of the fridge around 30–45 minutes before cooking. Pat it completely dry with kitchen paper and season really generously with salt and black pepper. As always with a thick piece of meat, getting the surface dry is important. Moisture and a beautiful golden crust are not particularly good friends.
