BBQ Sea Bream with Tomato, Caper & Herb Salsa

I am a man who adores capers. I’m talking spoon out of the jar obsessed. It’s no surprise we’re using them again here! This one is very similar in spirit to the salsa verde sea bream on my page, but this one is considerably fresher and lighter. Rather than loads of olive oil carrying the sauce, we are using the juices from really ripe tomatoes, loads of lemon, capers, shallot and fresh herbs. The salsa should almost sit somewhere between a salad and a dressing. Juicy, sharp, salty and really herby, with just enough olive oil to bring everything together. And as always with something this simple, buy the best fish and tomatoes you can get your hands on.
