Octopus Hot Dog with Soft Onions, Mustard & Ketchup

Octopus in a hot dog bun sounds a little ridiculous, and to be completely candid, it is slightly. But if you’re up for something a little different, it’s a thing of beauty! It is familiar enough to eat like a proper hot dog, but then you get this smoky, meaty octopus running through it which makes the whole thing feel completely different. The onions are actually crucial here. I don't want them crispy or deeply caramelised. I want them soft, sweet and almost silky so they contrast against all that char on the octopus.
