Gilda Steak Tartare

A tartare is a very divisive dish. What i mean by this is that everybody has their preference on how they like it. My girlfriend enjoys finely minced meat, i like a little bite, so naturally, i make the minced version. One thing we both agree on, is that tartare should be bursting with flavour. This one certainly is. It combines my two true loves in the world being the Spanish gilda (olive, anchovy and guindilla pepper) and the french classic. It will punch you in the face with salt, spice and all things nice. You can also strip this back and experiment with what you like in a tartare!

Step 1

Try and get your hands on the highest quality piece of fillet you can. If i were you, make friends with your local butcher and he will sort you out! Place your fillet in the freezer for about 20–30 minutes before cutting to firm it slightly and make it easier to slice.
