Smashed Crispy Potato Patatas Bravas

Patatas bravas is one of those things I will order every single time I see it on a menu. My version is slightly different. I’m known amongst my friends these days for being the smashed crispy potato king, and for good reason. I’m obsessed and make them constantly. I think the combination of the classic Spanish dish and my potato method makes for some seriously mean grub. And while I normally pan fry mine, you can absolutely do them in the oven with rosemary and garlic if you want something slightly more hands-off.

Step 1

Start by adding the potatoes to a pan of generously salted cold water. Bring to the boil and cook for around 15 minutes, depending on their size, until tender. You want a knife to slide through easily, but don't take them so far that they are falling apart. This is actually quite a crucial step. Trust me, I’ve been there, nobody wants mushy potato. If in doubt, take one out of the pot early, attempt to squash it with a glass, if it works , bobs your uncle.
