Berry & Pistachio Tiramisu

I LOVE a traditional tiramisu. During this past summers sweltering heat waves, i could not face chocolate, so i developed this version instead. It's super fresh, light and that berry compote is to die for. If you're feeling boozy you can even add some berry gin in while it cooks!

Step 1

Start with the berry compote because it needs to be completely cold before you build the tiramisu. Add the berries, sugar, lemon juice and pinch of salt to a saucepan and cook over a medium heat for around 8–10 minutes. Let some of the berries collapse, but leave a few proper pieces of fruit intact.
