The Perfect Steak Au Poivre

For those of you who aren't fluent in french (what have you been doing with your life??), steak au poivre is a fancy way of saying steak and peppercorn sauce. It is by far my favourite pairing when it comes to steak. There are those out there who feel it sacrilege to have anything other than salt on a steak. Sod that i say, load up the cream and butter! And if you've ever wanted to make it at home.... now is your oppurtunity!

Step 1

We’re going to start with steak preparation, arguably the most important part. Ideally, the night before, pat the steaks dry and season liberally with fine salt on all sides, then place this on a wire rack in the fridge overnight. If you don’t have time for this step, take your steaks out of the fridge at least an hour before cooking, allowing the meat to come to room temperature throughout. This will help them get an even cook throughout.
