Garfield's Ultimate Lasagne

What have Garfield and myself got in common? Well, apart from the slight ginger twinge when my hairs wet, it would be our love of lasagne. Breakfast, lunch or dinner you can find me sat at the table with a hefty portion of Italian heaven. This is a recipe I’ve been developing for around 3 years now, and if I do say so myself, its particularly good. For the base of any amazing lasagne, you’re going to need a very tasty ragu. While I fundamentally believe that ’20-minute meals’ can be helpful in life, particularly after a 9/10-hour shift, however, a lasagne is the opposite of this. If you’re going to do it, do it properly. It is a labour of love, truly a way to show someone just how much you care about them. So, if you’re expecting a 30 minute job here you are severely mistaken. Whip this bad boy out when the in-laws are coming over, a Sunday night perchance, but definitely not on a Tuesday night after an hour on the tube.

Step 1

Preheat the oven to 120°C fan. Heat a Dutch oven or large pan over medium-low heat for 5–10 minutes. Add a good glug of olive oil and heat for 1 minute, until glossy. Meanwhile, pat the short ribs dry and season generously with salt. Add them to the pan, pressing each one down firmly for good contact, and cook until caramelised on all sides. Remove the short ribs, then caramelise the mince in batches and remove it. Repeat with the sausage meat, cooking the meats in stages so each has good contact with the pan.

Very good recipe! Lasagne came out amazing! I’d ask if the video could include all steps as I got a bit lost, especially on the bechamel sauce
