A Bloody Good Scotch Egg

A Scotch egg has the potential to be AMAZING, and it should be SO much better than the pathetic versions you find sitting in supermarket fridges. For me, the yolk needs to be properly jammy, the sausage meat should be packed with herbs and spice, and the coating needs to be really crisp. Then serve the whole thing with a mustard that is sharp enough to make your eyes widen slightly. Basically, if we're going to make a Scotch egg, let's make a bloody good one.
