Thai Butter Mussels

I think as a society we have limited ourselves too much when it comes to flavour combinations. Everyone loves a classic creamy mussel (for good reason), but there's something about the soft hum of spice on the pallet paired with the saltiness of the mussel that works so well. This Thai inspired flavour combo certainly delivers variation and indulgence. In fact, it was the first dish i served for my beloved when we moved in together. We had no furniture at the time so we enjoyed this on the floor, but if anything it only added to the experience. I hope you get as much joy from it as i do!
