Charred Courgette Salad with Whipped Lemon Ricotta

For me, a great salad should almost be annoyingly simple and all about contrast. Smoky flavours vs bright acidic lemon. I want to bring the palette alive! The important bit of this one is the courgettes. We are slicing them fairly thinly and cooking them over really high heat so they char quickly and become golden and crispy around the edges while still retaining a little bite. What we absolutely do not want is pale, watery courgette quietly steaming away in a lukewarm frying pan. Courgettes contain loads of water, so if your heat isn't high enough they will release all of that moisture and turn soft and soggy before they ever get the chance to colour. Whether using a pan, bbq, pizza oven it needs to be HOT!

Step 1

Start with the whipped ricotta. Add the ricotta to a food processor or blender with the lemon zest, lemon juice, olive oil, and a generous pinch of salt and black pepper. 2. Blend for around 1–2 minutes until completely smooth, light and almost fluffy. Scrape down the sides if needed and give it a taste. You want the lemon to be PUNCHY because this is what is going to cut through the olive oil and charred courgettes later.
