Crispy Calamari with Punchy Lemon, Chilli & Caper Dip

You’re nine years old, at a beach restaurant in continental Europe. You open the menu, looking for a cheesy pizza, only to see calamari sat right there. Apprehensively, you try it, after all, it is squid. My lord, it’s crispy, tangy, and paired with a good dip, complete perfection. This, is how I make it. If it’s hot, properly crispy and seasoned straight out of the fryer, I am VERY happy. The two important things with calamari are dry squid and very hot oil. Get either of those wrong and you can very quickly end up with a slightly depressing soggy mess!

Step 1

Start with the dipping sauce because giving it a little time to sit allows all those flavours to properly get to know each other. Add the mayonnaise to a bowl with the garlic, chopped capers, caper brine, chilli, lemon zest, Dijon, parsley and chives.
