Charred Pepper, Tomato & Caper Salad

This is probably one of my favourite salads to serve, especially in the summer. It is incredibly simple, but because there is nowhere for any ingredient to hide, the quality really matters! Get the ripest, juiciest tomatoes you can find, use decent olive oil (I like Citizens of Soil) and take the time to properly char your peppers. That smoky sweetness against the fresh tomatoes and salty capers is exactly what makes this salad so good. If you genuinely cannot be bothered to char and steam your own peppers, you can absolutely buy them jarred from the supermarket and still make something delicious. That said, I will always recommend doing them yourself if you have the time. The flavour is considerably better and you get those lovely slightly burnt edges running through the salad, which give it so much depth.

Step 1

Start with the peppers. Place them directly over a gas flame, under a very hot grill or onto a BBQ and cook until the skins are properly blackened and blistered all over. Don't panic when they start looking slightly cremated, that is exactly what we want.
