Cheese and Onion Bombay Mix Bhajis

I was prepping for an Indian themed dinner party lately, was perusing the local supermarket and spotted a bag of bombay mix. I immediately knew what had to be done. Combine three of my favourite things for the ultimate curry starter. Boy of boy i BEG you try this one out. The mix of flavours is mind boggling and wonderful!

Step 1

Add the brown onion, red onion and spring onions to a large bowl with the salt and lemon juice. Give everything a really good squeeze with your hands and leave it for around 10 minutes. The salt will pull moisture from the onions, which will help create the batter.

I must admit I did skip the cheese in this one 🫣 BUT, these were super easy to make and the flavour and crunch combo was delish.
